A Bocan, or Cocoa-Drying House in Granada, 1857. Creator: Percy

A Bocan, or Cocoa-Drying House in Granada, 1857....building used for...drying and preparing the coffee and cocoa...[It] has a platform or terrace extending its whole length on that side most exposed to the sun. The...two floors - the upper one being used for coffee; the lower one for cocoa...are divided by partitions of open lathwork...to allow of a free current of air through every part. The apartment used for drying the cocoa is provided with immense shallow trays...on metal wheels. These are made to pass through apertures constructed in the main wall, so as to be rolled out on to the platform...The pips of the cocoa, having been cleared of all extraneous substances...are carefully spread out upon these trays, and exposed daily to the sun until thoroughly dried, when, having been sorted and picked, they are packed in bags for shipment'. EDITORS COMMENTS
Percy's captivating image of A Bocan, or Cocoa-Drying House in Granada, captured in 1857, offers a glimpse into the agricultural heart of this Caribbean gem. The building, used for both drying and preparing the coffee and cocoa beans, is a testament to the rich history of the region's thriving plantation industry. The structure boasts a lengthy platform or terrace on its sun-exposed side, with two floors. The upper floor was designated for coffee processing, while the lower floor was reserved for cocoa. The floors were divided by partitions of open lathwork, allowing for a free current of air to circulate throughout. The apartment utilized for drying the cocoa beans was furnished with immense, shallow trays on metal wheels. These trays could be rolled out onto the platform through apertures constructed in the main wall, enabling the cocoa pips to be exposed daily to the sun until completely dried. Once dried, the cocoa beans were sorted, picked, and packed in bags for shipment. This engraving, published in the esteemed Illustrated London News, showcases the intricacies of the cocoa production process in the 19th century. The image transports us to the lush, tropical setting of Grenada, where palm trees and nature's bounty reigned supreme. The raw materials of coffee and cocoa, once processed, would eventually find their way to Britain and other parts of Europe, contributing to the growth of the confectionery industry.
