The French term "karite" for Shea butter is derived from the Wolof language of Senegal, where it is known as "ghariti." In this process, the nuts are first baked in an oven, allowing them to soften and release their rich, nutty aroma. Once baked, the nuts are carefully cracked open and their kernels extracted. Next, the kernels are pounded in a large mortar using a pestle, releasing their natural oils. The oils are then ground between two large stones or using a wooden pestle, until the desired consistency is achieved. The Shea butter that emerges is known for its distinctive ivory color and nutty, slightly sweet taste.
