Clamping was a vital method of food preservation in rural communities, allowing potatoes to be stored for consumption throughout the winter months. The potatoes were first spread out in a single layer on the ground to allow any moisture to evaporate, before being carefully stacked in the clamp. The earth was then added on top, creating an insulating layer that kept the potatoes cool and dry. The serene scene is a testament to the hard work and resourcefulness of the farming community in County Down during this period. The men's focused expressions and the orderly arrangement of the potatoes speak to the importance of this task and the pride taken in their work.
