Edible sea urchin
Edible sea urchin (Echinus esculentus) in a kelp forest. The sea urchin is an echinoderm, a relative of the starfish. Its exoskeleton shell, or test, is covered in numerous spines that protect it from predators. This sea urchin, also known as the common sea urchin, is found along the coast of the British Isles, excluding the east coast. It grows to a diameter of 16 centimetres and feeds on algae, mainly kelp, which it scrapes from the surface of rocks. Only the urchins reproductive organs, roe, are edible.
