EDITORS COMMENTS
This evocative photograph captures the traditional process of sturgeon caviar extraction in Astrakhan, Russia, in the year 1913. Sturgeon, a large and ancient fish species, have been prized for their precious caviar for centuries. In this image, we see a group of skilled workers gathered around a large sturgeon that has been carefully caught in the wild. The fish lies on a bed of ice, its body glistening with moisture. The caviar extraction process is a delicate and intricate one, requiring great care and precision. Using long, thin metal spoons, the workers carefully scoop out the precious roe from the fish's belly, taking care not to damage the delicate eggs. The roe is then carefully inspected for quality, with only the largest and most perfectly formed eggs being selected for consumption. The caviar is then spread out on trays to cool and mature, developing its distinctive flavor and texture. The result is a luxurious and indulgent food, prized for its rich, complex taste and its ability to elevate even the simplest dishes. This photograph offers a glimpse into a bygone era, when the world was still connected to the natural rhythms of the seasons and the bounty of the earth was celebrated and cherished. Today, sturgeon and their caviar remain symbols of luxury and indulgence, and this image serves as a reminder of the rich history and tradition behind this unique and treasured delicacy.
